Directions

  1. Heat BlueStar oven to 375°F. Bring a large saucepan of salted water to a boil and cook ziti just shy of al dente; drain well. Meanwhile, brown ground beef thoroughly in the de Buyer Country Fry Pan, breaking it into bite-size pieces. Remove excess fat if necessary. Add onion and cook until softened, then add garlic and cook briefly. Stir in tomato paste and cook until slightly darkened. Add crushed tomatoes, tomato sauce, Italian seasoning, salt, and black pepper. Simmer until the meat sauce is rich and slightly reduced. Toss cooked ziti with most of the meat sauce. Transfer half to a baking dish, distribute spoonfuls of ricotta throughout, add Parmesan and part of the mozzarella, then add remaining pasta. Finish with remaining meat sauce and mozzarella. Bake uncovered until bubbling throughout with browned cheese around the edges, generally 30 to 35 minutes. Rest 10 minutes before serving. Finish with fresh parsley or basil.

Equipment

Wüsthof IKON Chef’s Knife; Asahi Hi-Soft cutting board; de Buyer Country Fry Pan; large saucepan; colander; wooden spoon or spatula; baking dish; BlueStar range and oven.

Food safety & storage

Cook ground beef to 160°F. Refrigerate promptly and use within 3–4 days. Reheat until hot throughout. Individual portions may be refrigerated or frozen in suitable containers. Oven reheating is preferred when practical to restore browned cheese edges.

Keep something good cooking.
