Directions
- Whisk olive oil, lemon juice and zest, garlic, cumin, coriander, paprika, turmeric, cinnamon, optional cardamom, salt, and pepper. Toss with chicken and marinate at least 30 minutes and up to 4 hours.
- Cook the rice in water or chicken stock according to the rice package directions; keep warm.
- Heat the BlueStar griddle or a large seasoned de Buyer skillet over medium-high heat. Cook chicken in batches so it browns rather than steams, turning until deeply colored and the thickest pieces reach 165°F. Rest 5 minutes.
- Whisk Greek yogurt, tahini, lemon juice, and grated garlic into a smooth sauce. Thin with a spoonful of water if needed.
- Divide rice and romaine among six bowls. Add chicken, cucumber, tomatoes, red onion, and parsley.
- Finish with the yogurt-tahini sauce and serve immediately.

Food safety & storage
Cook chicken to 165°F. Marinate chicken under refrigeration and discard used marinade. Refrigerate cooked chicken and rice within 2 hours and use within 3–4 days.
Leftovers & make-ahead
Store chicken, rice, vegetables, and sauce separately when possible. Refrigerate cooked chicken and rice promptly and use within 3–4 days. Reheat the cooked components thoroughly before assembling fresh bowls.
