Directions
- 1. Cover the dried chickpeas generously with cold water and soak 12–24 hours. Drain and dry very well. Do not cook the chickpeas before making the falafel.
- 2. Heat the BlueStar oven to 425°F. Pulse chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper in a food processor until finely chopped but not pureed. Pulse in baking powder and flour. Chill the mixture 15 minutes if it feels soft.
- 3. Form into about 16 compact patties or balls. Arrange on a well-oiled sheet pan, brush the tops lightly with olive oil, and bake 20–25 minutes, turning once, until deeply browned and crisp outside and hot through.
- 4. Whisk tahini with lemon juice, a pinch of salt, and enough cold water to make a pourable sauce.
- 5. Divide warm brown rice among four bowls. Add tomatoes, cucumber, red onion, feta, and four falafel per bowl. Drizzle with lemon-tahini sauce and serve.

Food safety & storage
Keep soaked chickpeas refrigerated if soaking longer than the initial room-temperature setup period. Refrigerate cooked falafel, rice, sauce, feta, and cut vegetables promptly and use within 3–4 days. Do not leave the assembled bowls at room temperature longer than 2 hours. Reheat falafel in a hot oven or air fryer for best texture.
