  1. Heat the oven to 350°F. Butter a 9-inch springform pan and line the bottom with parchment. Whisk together the flour, baking powder, and salt. In a separate bowl, beat the butter and 3/4 cup sugar until light. Beat in the eggs one at a time, then the vanilla. Mix in the dry ingredients in two additions, alternating with the milk, just until combined. Toss the apple slices with lemon juice. Spread the batter in the prepared pan and arrange the apples over the top, pressing them lightly into the batter. Mix the cinnamon with the 2 tablespoons sugar and sprinkle over the apples; add sliced almonds if using. Bake 45 to 50 minutes, until the center is set and a tester inserted into the cake portion comes out clean. Cool 15 minutes before removing the pan ring. Cool further before slicing and dust with confectioners' sugar if desired.

Food safety & storage

Do not taste raw batter containing flour and eggs. Bake until the center is fully set. Cool before covering; refrigerate if held more than 2 days.
