Directions
- 1. Heat the oven to 375°F. Cut the tops from the peppers and remove seeds and membranes. Stand them upright in a baking dish.
- 2. Heat olive oil in a skillet over medium-high heat. Add onion and cook 4–5 minutes. Add ground beef and cook, breaking it up, until browned. Stir in garlic for 30 seconds.
- 3. Stir in rice, drained tomatoes, oregano, smoked paprika, salt, pepper, half the feta, and parsley. Taste and adjust seasoning.
- 4. Divide the filling among the peppers. Pour stock into the bottom of the baking dish, cover tightly with foil, and bake 30 minutes.
- 5. Uncover, top with the remaining feta, and bake 10–15 minutes more, until the peppers are tender and the filling reaches at least 160°F. Rest 5 minutes before serving.

Food safety & storage
Cook the ground-beef filling to at least 160°F. Refrigerate stuffed peppers within 2 hours and use within 3–4 days; reheat leftovers to 165°F.
