Directions
- Heat the olive oil in a Dutch oven over medium heat. Add the onion, carrot, and celery and cook until softened, 6 to 8 minutes. Add the garlic, rosemary, and red pepper flakes and cook 30 seconds. Stir in the tomato paste and cook until it darkens slightly, about 2 minutes. Add the chickpeas and broth. Mash about 1 cup of the chickpeas against the side of the pot to give the broth body, then bring to a gentle boil. Stir in the ditalini, salt, and pepper and simmer, stirring often, until the pasta is al dente, about 9 to 11 minutes; add a splash of water if the mixture becomes too thick. Remove from the heat and stir in the lemon zest, lemon juice, and Parmesan. Rest 5 minutes, adjust seasoning, and serve with more Parmesan and olive oil if desired.
