Directions
- 1. Heat the oven to 425°F. Place cauliflower, chickpeas, peppers, and onion on a large rimmed sheet pan.
- 2. Mix olive oil, garlic, cumin, paprika, coriander, turmeric, cinnamon, cayenne, salt, and pepper. Toss thoroughly with the vegetables and chickpeas, then spread into an even layer.
- 3. Roast 25 to 35 minutes, turning once, until cauliflower is browned and chickpeas are lightly crisp.
- 4. Whisk tahini, lemon juice, grated garlic, and enough cold water to make a pourable sauce. Season lightly with salt.
- 5. Squeeze the roasted mixture with the remaining lemon. Serve with tahini sauce, parsley, and optional pita and fresh vegetables.

Food safety & storage
Refrigerate cooked chickpeas and vegetables within 2 hours. Keep tahini sauce refrigerated and use leftovers within 3 to 4 days. Reheat the roasted mixture until hot throughout.
