Directions
- 1. Heat olive oil in a Dutch oven over medium heat. Cook onion, bell pepper, and jalapeño 6 to 8 minutes until softened.
- 2. Add garlic, cumin, smoked paprika, oregano, chipotle, and adobo sauce. Cook 1 minute until fragrant.
- 3. Add black beans, broth, tomatoes, bay leaf, salt, and pepper. Bring to a simmer, then reduce heat and cook uncovered 25 minutes.
- 4. Remove the bay leaf. Blend about one-third of the soup with an immersion blender, leaving plenty of whole beans.
- 5. Simmer 5 minutes more. Stir in lime juice, taste, and adjust salt. Serve with desired toppings.

Food safety & storage
Refrigerate soup in shallow covered containers within 2 hours. Use refrigerated leftovers within 3 to 4 days and reheat to 165°F or a full steaming simmer.
