Directions

  1. 1. Sweat the onion, carrots, and celery in olive oil for 8 minutes.
  2. 2. Add the garlic and tomato paste; cook 1 minute.
  3. 3. Add the farro, beans, tomatoes, stock, rosemary, thyme, and bay leaf. Simmer until the farro is tender, about 30–35 minutes.
  4. 4. Add the spinach and cook 5 minutes.
  5. 5. Season to taste and finish with Parmesan.
