Directions
- 1. Heat the oil over medium heat. Cook the onion, carrots, and celery 8–10 minutes until softened.
- 2. Add the garlic and tomato paste; cook 1 minute.
- 3. Mash about half of the beans. Add the whole beans, mashed beans, tomatoes, stock, thyme, rosemary, red-pepper flakes, and Parmesan rind. Simmer 25 minutes.
- 4. Add the kale and simmer 10 minutes.
- 5. Fold in the bread and simmer 5–10 minutes, until thick but still spoonable. Season to taste.
- 6. Rest 10 minutes; finish with Parmesan and olive oil.
