Directions

  1. 1. Heat oven to 350°F. Grease an 8x8 or similar baking dish.
  2. 2. Whisk eggs with salt and pepper. Bake until set and eggs reach 160°F, about 15 to 20 minutes. Cool slightly and cut into 8 portions.
  3. 3. Split and lightly toast English muffins. Assemble each with egg, cooked sausage or bacon, and cheese.
  4. 4. Cool completely, wrap individually, and freeze in a labeled freezer bag.
  5. 5. Thaw overnight in refrigerator for best texture, then reheat until center reaches 165°F.
