Directions

  1. 1. Bring a large saucepan of water to a boil and add 1 teaspoon salt. Add the green beans and cook for about 4 minutes, until bright green and just tender.
  2. 2. Drain the beans and rinse briefly under cold water to stop the cooking. Shake off the excess water and pat dry if needed.
  3. 3. Heat the olive oil or butter in a large skillet over medium-high heat.
  4. 4. Add the green beans and minced garlic. When placing the green beans into the hot skillet, lay them away from you so any hot oil or butter splashes away from your body.
  5. 5. Cook for about 2 minutes, stirring frequently, until the beans are hot and the garlic is lightly golden.
  6. 6. Season with the remaining salt and black pepper. Taste and adjust the seasoning if needed, then serve warm.
  7. Make-ahead: The green beans can be blanched, cooled, dried, and refrigerated ahead of time. Finish them in the skillet with the garlic just before serving.
