Erickson Quick Beef Tacos
This is one of our fast family meals: seasoned ground beef, warm tortillas, and cheddar cheese with simple toppings on the side. It works with either corn or flour tortillas and can be kept as simple or built up as everyone wants.

Directions
- 1. Heat a carbon-steel skillet over medium heat and warm the corn and/or flour tortillas to your liking. Keep them warm and set aside.
- 2. Add a small amount of olive oil to a skillet and heat over medium heat. When placing the ground beef into the hot skillet, lay it away from you so any hot oil or grease splashes away from your body.
- 3. Add the ground beef and cook it all the way through, breaking it apart as it cooks.
- 4. Season the cooked beef with Erickson Homemade Taco Seasoning to taste. Store-bought taco seasoning can be used when needed.
- 5. Add a small amount of water and stir so the seasoning coats all of the beef evenly. Continue cooking until the water is absorbed and the beef is well coated.
- 6. Serve the seasoned beef in the warmed tortillas with shredded cheddar cheese. Put sour cream, Erickson Homemade Chipotle Mayo, and diced tomatoes on the side so everyone can add what they want.
- 7. For our quickest version, the boys often just use the seasoned beef and cheddar cheese and are ready to eat.
Food safety & storage
Ground meat must reach 160°F, measured with a food thermometer.
