Erickson Stovetop Rice
We do not use a rice cooker for our everyday rice. This is our family-tested stovetop method in a small cast-iron pot, using a simple 1-to-2 rice-to-water ratio. The Cilantro Lime Rice variation is included below.

Directions
- 1. Rinse the rice thoroughly before cooking.
- 2. Bring the water to a boil in a small cast-iron pot.
- 3. Add the rinsed rice and boil for 3 minutes.
- 4. Reduce the heat and simmer for 10 minutes.
- 5. Remove from the heat and let the rice sit for at least 5 minutes.
- 6. Fluff with a fork, cover, and let it sit for another 5 minutes.
- 7. Add butter if desired and serve.
- Cilantro Lime Rice variation: For 2 cups cooked rice, stir in 2 tablespoons butter until mixed. Add the juice of 1 lime and mix again. Just before serving, fold in 1/2 cup chopped fresh cilantro. Taste and adjust the lime and cilantro to your preference.
