Yield: about 1/2 cup | Prep: 5 minutes

Ingredients

  • 3 tbsp paprika
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp thyme
  • 2 tsp oregano
  • 2 tsp black pepper
  • 1–2 tsp cayenne
  • 1 tsp kosher salt

Method

Whisk and store airtight.

Use

Lightly oil or butter chicken, fish, shrimp, pork or steak, season generously, then cook in a properly heated skillet or on the grill.

EFK note

Blackening is a technique as much as a seasoning. Aim for a dark seasoned crust, not burned spices.

Use clean, dry utensils and containers. Protect dry blends from heat, light and moisture.
